Melemen Recipe (Turkish Omlette)

5 tomatoes, finely chopped (you can also use 3/4 tin of chopped tomatoes)
7 fresh peppers, finely chopped (it is better if you can use the Turkish paprika peppers)
4 eggs
some grated cheese
1 medium size onion (finely chopped)
salt/black pepper
oil

Fry the finely chopped onions with the oil until golden. Then add the peppers into the pan. Cook the peppers until they start to soften. Add the tomatoes and mix them well in the pan with the onions and the peppers. Cook for 5-10 minutes more.

Add salt and black pepper to taste. Crack the eggs together into the pan over the onions, peppers and tomatoes. Slightly stir the eggs into the vegetables. Cook over low heat until the eggs are lightly set.
